wheel and tire size?

I know it has been asked but of course with the search feature down and me not bookmarking some threads here and there, I must ask again.

I am building up a '72 GMC 4x4 with an 8" suspension lift and a 2" body lift. It will be my daily driver (I know it will be a gas hog) but yet I will be taking her for some off road fun on the weekends.
I am looking at getting BFG Mud Terrain tires and not sure on the wheels yet, Maybe some MT's.

My question is, what wheel size and backspace do I need for my rims so that I can tuck as much without sticking out real far to attract the cops and what tire size should I run? I was thining 38's or 40's.
