Differential trouble?

O.K. Since my '70 stepper is now my DD, I've noticed something odd. Truck has a OEM 3.07 posi rear. When making a left turn from a stop, it feels like the rear is "grabbing" /(slipping?). There is some audible but light noise. Once you straighten out, it's fine. And, it doesn't seem to be as noticeable on a right turn from start. I had the local lube guy check the oil and it's full.

I'm thinking I should pull the cover and check for wear, and hopefully refill and go.

I want to add a fill plug. What level???
