The 250 is probably the most popular and the best bet for what you are looking for.

The 194, 215 (Pontiac), 230, and 250 were pretty much the same block with different bore and stroke. The 292 has a long stroke and corresponding taller block.

250s make acceptable power (torque) and are the easiest to find. Parts are cheap and they are all real easy to work on!
