Junkyard 3-door and '68 Panel... what parts?

The junkyard by my got in a 3-door Suburban, and a '68-era panel. I don't know the exact year.

I mainly play with '60-'66 trucks and Suburbans, so I know what the good parts are to get.
What are the hard-to-find parts for the '67-72 3-doors and Panel trucks?
I HATE that they're in the junkyard, but they won't sell the whole truck, just parts.
The 3-door still has the middle seat... they're always missing on the '60-66 Subs. Are they hard to find on the later ones?

What about headliner trim, windows, that third door, etc. etc.
