Radiator/Fan Question

My truck has the original radiator and a big plastic shroud that is attached that surrounds the fan. The motor is a sb 350.

I'm thinking about replacing the radiator with an aluminum one and was wondering if that fan shroud (if that's what it's called) is necessary. I don't see it in too many other pictures of engines.

The engine temp runs between 180 and 200 when warmed up. Would removing this increase the engine temp?
