Right Stall converter??

I know you're supposed to base the stall convert off the CAM. Thats where my problem comes into play. I bought the engine used so i have no cam card or cam sticker, and i have no idea what cam it could be

I do know it is a Comp Cams. And there is a sticker on one valve cover with 10 part numbers and an executive order number(D-279-6)

It supposedly is a 383 stroker motor.
Ive narrowed it down to about 5 different cams it could possibly be

12-207-2 duration: 255/261 lift: .421/.451 050: 203/212

12-208-2 duration: 265/269 lift: .442/.465 050: 211/221

12-206-2 duration: 260/260 lift: .440/.440 050 212/212

12-210-2 duration: 268/268 lift: .454/.454 050: 218/218

Now this one has a higher lift, so if it was a stroker motor maybe this one?:
12-106-3 duration: 342/342 lift: .447/.447 050: 222/222

Any ideas??
How can find out what cam i have?
Are those numbers different enough to make much of difference in choosing stall converters
