Question Restoration?

I'm having my '72 GMC Sierra Grande 3/4 with 66,000 Miles and all origional Restored.402BB, Turbo 400 ,PS,PB,A/C ,Cheyenne Trim.and I don't know whether to keep it all origional and use the origional intake manifold and buy a new quadrjet carb. and use the origional exhaust manifolds or put an edelbrock carb. and intake manifold and headers on it. Is it worth it to use the edelbrock parts and headers performance wise? How much more horsepower would the headers and edelbrock parts give me over stock? Would it hurt the value of the truck to put on the edelbrock parts on? or would you all keep the truck origional?.Thanks everyone for your input.
