The spring flex shouldn't cause a bend although it could be a factor. The u bracket was desined to flex with the spring in that direction but not flex the other direction with torque applied by the u bolts. Also the hole in the u brackets goes on the center pin on the leaf spring, this locates the rear axle and keeps it from walking around. With the u bolt bracket underneath your truck will be lower by a half inch and the center pin will be covered making the rear axle Able to slide around on top of the leaf. A half inch off center is all it takes to make the truck drive awkward such as when you accel or decel it will drive sideways and dart sideways on braking

Your idea is valid but possibly not possible with the way the rears are setup. Here is where I think the bending issue takes place. When your hard on the throttle the pinion and axle and leafs "wrap up" meaning the litteraly move up some causing the rear of the spring pad on a flipped axle to force down on the u bracket and bend it if you notice in my pics the rear of the brackets were what bent. I think if the leaf flexed it would force the u bracket out and away from the axle tube as the leaf straightens and it would do so evenly to both sides
