temp. guage question

i have a 68 that has the factory gauge package, the p.o. had a idiot light sending unit in it. with the key on and the wire grounded the gauge pegged.
so i put a gauge sender in. when the truck starts warming up the gauge starts climbing, when the thermostat opens the gauge is pegged, so i put a mechanical gauge in to confirm temp. 190. any ideas would be appreicated
