Adjust the sensitivity of the accelerator pedal

Did the swap of a 5.3 into a late "60s truck, but the throttle is so sensitive. I just touch the gas pedal and it wants to leap into the next parking space. If there is a bump in the road it shifts my weight on my little toe and I accelerate unexpectedly. Forget about the rough roads, I'm driving in 'pulse mode' lurching forward like its a blown alcohol dragster or something.

Is there any way to adjust the sensitivity on the drive-by-wire units?
The response is just way too fast.
