Wiring...

I am installing a EZ wiring harness in my 51 1/2 ton. The engine is a 1968, 327. It has electric senders for temp and oil pressure. The new harness has wires for those too. I want to use the original gauges (with new face plates and needles etc...) but they are for mechanical mechanical senders. I have the original senders. Will they bolt on to my 327?? and work? Or should I mount a some new gauges below the dash, and leave the originals just for looks?

Also, fuel gauge...S10 frame and fuel tank, 1951 fuel gauge. I thought I remeber someone on hear figuring out how to use the original gauge with the higher OHM fuel sender from the S10. Is it as simple as putting a resistor in line to send the correct current to the fuel gauge?
