Classic Vehicle Insurance question

Hello, I知 new to this page, and my 71 GMC k2500 is my first restoration project. I知 the second owner of this truck, and I知 doing a pretty in-depth restoration project. Body off frame style. I致e looked around for quotes for insurance and I知 having a hard time finding something reasonable or that will work for me. Many of the companies offer a "classic vehicle insurance" but is limited to only bright sunny days for car shows and cruises, and must be stored in secure garage. Like most of us, we love to drive our trucks, sometimes tow a trailer, show them off etc etc. So who is a good insurance company to go through that wont tie my hands on how I will drive MY truck??
