Bed Wood Longevity

I got my oak bed wood back in April and the ends of the boards were sealed with some type of finish. It looks like there hasn't been any water damage to the wood so far, but the wood probably will not be installed until this winter or next summer. Of course it depends on temperature and humidity, but could I get away with leaving the wood as it is, unfinished and unsealed except for the ends? Or should I seal all of it? I probably should have waited until I really needed the wood anyways...
