engine removal

It will be six to eight weeks before i get my K1500 as its in transit to me here in the uk.
I have a new 383 built here and i am contemplating putting in the truck instead of the 350 it has, Whats involved in removing the engine, can it be done with the bonnet (Hood) off or do i need to remove the cab. What is the easiest way to go about it.
I have no problem either way , but what way would you guys do it. And how easy is it to remove the cab complete?
