need opinion on which carb to use

im going to use a 600 cfm (1406) or a 750 cfm(1411) edelbrock on my truck with the performer rpm intake i got. someone said using a 750 will be too much of a carb for my mostly stock 350 with hei and headers. will a 600 give me much better gas mileage? later down the road i want to build a nice 383 out of my 350. but for now is the 1411 too much of a carb. its a wopping 15 dollars of difference for 150 cfm... but how much of that money i am going to lose on gas with that 750....... NEED OPINIONS
