Gear ratio ?

My 68 stepside has a 350 tranny. The rear end way to low for me. This truck could have been a 3 speed a few years back. Tacking about 3000 rpm's at about 60-65. My question is, Whats the ideal gear ratio I'm looking for ? The other question is, For a rear end change out (Simplest) what years am I looking for. I don't want to be cutting or welding mounts or perches ? Would I be better off having the ring & pinion Changed ?
