ceramic coated exh manifolds and new engine break in

I heard you are not supposed to use ceramic coated manifolds while you break in a new engine. engine will be stock 327. im guessing it traps too much heat for the valves. I am going to break my engine in on a stand. Good idea or better in the truck? How long after the engine is broke In do I have to wait to put my ceramic coated manifolds on? anyone with experience with this? Rod.
