1968 GMC Long Bed Pickup 2wd Help!!!!!

Hey guys I'm new to this forum and I'm coming from Wisconsin. I have a 1968 GMC Long Bed Pickup 2wd that I am restoring. I want the top of the wheel wells to be just a little bit above the top of the tire so I am messing around with suspension. I've noticed there are about 12 leaf springs on each side of the rear.. why so many? and how many should I leave on? Its easy to take off because it is just attached with a U-bolt and I will replace those. Also I plan on putting a Detroit locker in and I would like to know which one anyone has used before? I am putting it in because now it is a one wheeled wonder (. I have a 12 bolt rear-end. I hope anyone can help with my progress thus far.
