Bottom line on oil weight???

I read a lot of the post and am trying to figure out what oil weight to go to on a 68 307 in North Georgia.

Im hearing the 10w/ anything is bad but 5w/anything is worse and that I should stick to sae30 castoil. Im also hearing words like viscosity which I have no clue what that means...but Im trying.

Will the SAE30 be ok year round? Temps hit mid to upper 90s in the summer and we typically have 3 weeks of 15-25 degree lows in the winter.

Any suggestions?
