Pedal assemblies? 56 truck

I'm curious as to what pedal assemblies you guys are running in your trucks.
My 56 has the stock long brake pedal and the stock floor mount gas pedal.
My truck came with the under floor master cylinder
The brake pedal is sticks out about 2" too far for me to drive comfortably and need to do something about it and what have you guys done with the gas pedal when running a modern carbed engine? I'm putting a vortec 350 in this spring and keeping it an auto.
Any info would be huge and greatly appreciated.
Here's what mine looks like now. I bought this truck as a total project and was just like this when I got it so I'm very UN-familiar with this setup.
