Clip the entire roof or just the inner/outer skins

Just wanted to get some opinions.
I have a 68 ex-motorhome that has a nasty hole cut in the back of the cab as well as the roof. I know I can cut all the spot welds and finally remove the skins but I think it would be much easier to just cut the a pillars and across the bottom of the cab. I would have a whole lot less visible bodywork needed that way.
I can cut and weld so that's not the problem, I just don't want to do more work that I need to. My cab is 100% rust free or I would just replace it. I have a donor that has rust in the rockers/floor so,,,,,,,,,,,,,,,,,
Chime in. I know there are some old production shop body men out there.
Here's a pic of Homer;
