68 sb, 283 vs 4.8 ls

I'm slowly making plans for this winter, my 68 currently has a 250 I6 which is a decent running engine but lacks power.
I'm looking for input on opinions here. I'm going back and forth contemplating which engine. I want to run a m20 or m21 transmission, should I go with a 283 which I could probably pickup and rebuild for roughly 1000 total or....should I go with a 4.8L LS? Just looking for some input, would really like to have my truck back together with either engine for our honeymoon on route 66 next June.
