So it's a regular clear, my theory is out the window.

When you primed and blocked, you did use a guide coat if I understood above correctly. So lets say the sealer went over smooth primer. Then the color was applied and then the clear. Do you think you had a lot of trash (dirt/dust) in the final or color coats? Did you get fish eyes all over?

If you put 2 gallons of clear, unmixed, on the truck... you should not be going through until cut and buff #5 at least! Damn. That's a lot of material for the exterior of a truck if it's not a crew cab dually with a camper shell that got painted at the same time.
