Door latches

This has probably come up dozens of times before but I'm struggling to get the door latch adjusted properly. The door latch is hitting the striker plate and I need a ridiculous amount of shims. There is a very fine line between having the door latch out far enough to clear the striker plate and the bolt heads of the striker plate hitting the door. I tried shimming the door hinge to lessen the gap at the rear of the door as much as I could but it still doesn't seem to line up right. I'm using new door latches but on closer inspection they look a little different from my old ones. The outer piece that is contacting the striker looks like it's cut on an angle on the new one.
