Yet Another Wheel & Tire Question

For my stock '76 RWD daily driver I want to get rid of the 16.5" wheels. I would like to buy a set of Pacer 17 x 9 (-12 offset) aluminum wheels. I'd like to get my ride a little higher off the ground by going to a larger diameter tire - something that says "this is a real truck". My question is what is the largest tire size that I can get away with that will not give me any interference problems? Somebody must have tackled this same challenge... help please!
