79 with 250 I6...looking for mods

So I've got a pretty nice truck that I've done a good bit of work to but the engine is still pretty bland and boring. So I'm asking for opinions and options. This gets driven once a week...tops.

I've read a lot about V8 swaps and they all sound straight forward but the cost of all the accessories required to swap in the V8 makes me think that it would be cheaper to buy a V8 truck and fix it up rather than swap one into mine.

So the other option I can see is to build up the I6. What are my options for this? I've rebuilt V8's before but haven't played around much with I6's. I think mine has the integrated head but not positive.
