Engine temp question. Weird?

1970 c10.
350 engine
New to me last week.
Ran one at sellers house. 40 degree that day in cleveland
This weekend installed
Edelbrock 2701 intake
HEI DIST
edelbrock 600 cfm electric choke
Timing set at 14 degrees
New 180 Mr gasket high performance thermostat.

Running it now in my shop with hose out the door port.
Won't warm up enough to open thermostat.
Been running a long time!
Runs smooth as hell but not to normal temp.
Any ideas? Radiator cap is off.
