72 C10 loss of power

I've got my 72 c10 running finally, now my issue is after about 10-15 minutes of driving she completely cuts out and loses all power. Won't start back up until roughly 10 minutes of sitting. The truck has been sitting for about a month since I was last stranded in the middle of nowhere with her and it died 5 seperate times on the way home. Fuel pump is working so it is getting fuel to the Carb. Has anybody else had this issue or similar issues and can shoot some ideas my way on getting her back on the road. Does have a new motor freshly rebuilt with 500 miles on it. I did put that mileage on it before this issue started. Thank you!
