Where to begin?

My 71 has a new 190 hp crate, aluminum intake, Holley 600, all new. It acts like it loads up from red light to red light after a 10 mile drive. Once it is cleared out, it runs great. Only does it when it is up to temp. Is the 600 too much carb for this engine? I have not had time to check floats or anything. Any ideas?
