Changing direction lol, now some new wheel fitment questions :)

OK, I'm new here and some may have seen my post asking about my C20, lowering, wheels, tires, getting rid of the utility bed, etc.
Well, I've changed my mind, it's gonna stay stock height with the utility bed. Being an original 396 4sp utility truck from day one it kind of cool, so I think it deserves to stay that way, at least for now.

SO, looking at (8-lug) wheels, I am thinking of the (black) steel Wheel Vintiques 16x8's (4" BS). I am still planning/hoping to convert to disc brakes (POL), and I'm wondering if anyone else out there is running these wheels and if they clear the disc setup?

With tires, I would love to use 275/60-16 all around (29"Tall 10.8Wide 6.5 Sidewall) but that size doesn't seem readily available.
My next choice is a 255/65-16 (29.1Tall 10Wide 6.5 sidewall) OR 255/70-16 (30.1Tall 10Wide 6.5sidewall), basically a 1" height difference.
I want to go as wide as I can (on an 8" rim) and have the tire (for the most part) 'fit' the wheel opening. Curious on others opinions/suggestions on these sizes?
