I've thought about putting a 1/4 turn ball valve on the short rubber fuel line that resides under the cab. Shut the valve off when you leave the truck, it will only get said thief about a half mile down the road. Downside is you'd have to crawl under the truck to make it work, but I'm guessing it would be pretty fool-proof.
