To rebuild or not to that is the ?(engine)

I'm having trouble making up my mind I almost went with a 383 but it started costing to much then I thought 350 crate motor from GM just the 260hp model now I'm thinking rebuild 327. I'm thinking of getting my 327 rebuilt instead of going with a 350 since i already have the block what should i do to it? could I make a stroker out of it?
how much power could i get out of it I would like a little over 300 hp? If I could make a stroker out of it what combonation should I use and what type of machine work do i need to get done?

should i just go with a 350?
