Looking for Some Advice

I just picked up a 1968 K10 Stepside. I am contemplating doing over my bed with wood but after reading on this forum and the web it seems for my circumstances it might not be worth it.

The truck would be outside from May through September every year in NY about a mile from the Atlantic Ocean. I would store it inside for the winter. Since it's exposed to the Sun and elements all summer it seems like it might not be the right choice to completely do it over and then have to touch it up every year. I don't want to do annual maintenance on the bed.

Can i do it over with some type of stain/finish that would allow me to keep it outside and not have to worry about it or is it not worth it to do it over?
