New Carb questions

I'm looking for a new or rebuilt carb for my 69 w/a 350. This thing has a manual choke on it at the moment.

What would you guys recomend as far as a replacement? I want a 4 barrel, do I need to replace the intake manifold. It has an Edlebrock unit on there at the moment, but that's all I know. How hard will it be to remove the manual choke and put the normal choke back on there. What is the normal choke? Can ya tell I'm green?
