new motor using oil ?

I have a 383 stroker motor that I rebuilt,new rings, bearings, cam, lifters, valve job etc.. It seems to be using oil, about a quart or more during first 700 miles. It does not smoke or leak and runs fantastic. I changed the oil after about the first 50 miles and since then I have put on about 600 more and have had to add a quart of oil. Where is it going ? I have not driven it much yet while I put the finishing touches on the total resoration. It has a rebuilt Holley 650, Edelbrock intake with headers and flowmasters for exhaust.The exhaust pipe is black like it is running rich but it smells like gas not oil. I am very happy with the way it runs..its a screamer ! just a little concerned on the oil consumption. Oh yeah, I am running Valvoline 30 wt oil. Any ideas ? thanks
