Over the last few days I have replaced the shoes and drums on my 68. Each side took from 2-3 hrs for me to do. Now I am a newb but was curious should it take that long? I guess what I am trying to find out is what is the correct order of putting new shoes and the springs on?

I'm not sure I follow your question... I always put on the new shoes on, put on the little rod that holds them in place from the back w/ the spring in the front, & then put the other springs on. My first drum took me about 2 1/2 - 3 hours, but the others probably took me a max. of 45 min each.

Just make sure you do them one at a time!

graywolf you hit it. I wasnt putting the hold down on the sides on first. I was putting the shoes on and putting the springs on that hold them together. Man I feel dumb

The way I do it is I attach the upper springs to the shoes first. Then I hook the upper springs onto the post at the top that the shoes rest against and use the shoes to stretch the springs. Then I install the hold down pins, then the adjuster and lower spring That way I don't have to struggle with stretching the big upper springs. I've replaced my shoes several times over the years. It probably takes me about 10 minutes a piece for the front wheels and maybe 15 minutes for the rears since there's the added complication of the e-brakes. Of course if the drums are stuck to the axles, that can add a LOT of time. The first time I replaced my shoes, I didn't realize that my drums were severely worn. It took me a long time to realize that I had to loosen the adjuster a bunch to get the shoes out of the groove in the drum. Another thing that can add a lot of time is if you're replacing the drums, and they don't have the adjustment window cut out.

Thanks for the info guys. I appreciate it. When I did the front discs on my 01 sierra it took 1 hr for the left side and 30 for the right side. Disc are easy to me compared to drums. Eventually want to get disc on the front but for now drums will have to do.
