Bed Mounted Kitchen Ideas

okay, to start. i do a lot of cooking outdoors for special events. my special dish is an old family concoction of American Fries, therefore i really only use a fish fryer to deep fry with. this recipe requires a fairly decent amount of prep space, and the tailgate is just less than proper size.

I had previously constructed one to use, but it took up too much space in the garage. it had a countertop on a raised platform with a sink (reall a kitty litter pan) and lots of work space. the trick is that it needs a substantial backsplash (about 20" high) in order to mount the potato cutter. it's one of those industrial cutters that looks like a can crusher (see below.) it takes quite a bit of force to cut some of the other ingredients, so the backsplash has to be well braced. it will also hold many of the ingredients, cutlery, the sink, and this time i want it to be compact, so i can fold it and store it more easily.

anyway, long story short: does anyone use anything like this? got any ideas for construction? I found these guys (www.drifta.com.au) that i'm thinking about knocking off a design, but am still curious. it's basically a modern chuck wagon
