New Shocks and Springs
I have 31"tires on my 68 Chevy. Now when I order new shocks and springs should I get them at stock height or should I adjust since it sits a few inches higher?

your tire diam has nothing to do with your shocks or springs.

Order shocks for the springs you have (stock = stock, 4" spring = 4" shock and so on).
