So if i went with the vortec heads what else would i need for a completed head/valvetrain. And what would it do to compression? Would I have to go to dished pistons or could I keep the flattops and still run it off 89 octane fuel?

Vortecs require self-aligning rocker arms - the CompCams self-aligning roller tips are a good choice. If you are not using more than .475 lift then the stock Vortec springs are fine. The GMPP Vortecs are 64cc - so depending on your existing heads there would be no change in compression.
