Just Changing the bulbs should not have effected the wiring. Did the kit also include a harness to add relays? High and low are on two separate circuits so if one is coming on when the other is on you could have power bleeding over to the positive side of the bulbs or you are getting some kind of backfeed on the ground circuit. I'd unplug the headlight sockets and the connector to your dimmer and start looking for continuity between the high and low beam circuits. On the stock wiring you shouldn't have any continuity at all between the two circuits. Even with an aftermarket relay harness you shouldn't have any between the high and low beams.
