Just one thing to address and then it's Green Flag Day

I am down to the end of getting the motor ready to crank it over ,,

After getting the tranny rebuilt I was told to be sure and put fluid in it before I cranked the engine up in my 72 ..Ok,,I remembered..

Doesn't it hold 10 quarts (it's a 350th) so I put in 8 and it ran some out of the over flow .. maybe a half to a full pint.

Do you suppose I should go ahead and run the motor and then check the tranny and then fill it on up?

If the trans and converter are empty, you won't be able to put all of it in, fire it up as is to break in the motor and then top off the tranny before you put it in gear, then drive the wheels off!
