Nice truck!
Id run er down to the local car wash with like 10 bucks in change and a couple cans of degreaser or something and wash that motor, go thru and service it (belts,hoses, filters, oil, plugs). You've got the right idea, a little at a time and keep it driveable). I wouldnt make any changes right away, get it running/driving safely and see what you think.
