Rear discs... hardline plumbing directly to calipers??
Have you guys ever done this? Stainless steel lines plumbed directly to a rear disc brake kit on a 12 bolt.
Just trying to figure out if this is a viable option or should I just get the flex lines and be done with it? Thanks

Get flex lines. The rear calipers are "floating" which means they move when the brakes are pressed (a little) and will cause alot of unneeded stress on a hard line which will eventually fail due to the flaxing of the line itself. Especially as the pads wear and the calipers move closer to the rotor as the inner pad gets thinner.
