QuadraJet 4 barrel way too rich!!!

I'm a fan of the QJ. A common issue with them is internal vacuum leaks caused by leaking plugs. That's what makes QJs "bad" in many people's minds. The advice to get a good book is golden because the rebuild instructions generally don't cover how to epoxy the plugs. A good book will also talk about kits and what is needed. Quadrajets aren't any more complicated than other carbs and they have some big advantages...no gaskets below the fuel level, tons of metering rod options, lots of them out there, etc. Taking the rime to research will give you the best outcome. From what you are describing it sounds like the float and or needle and seat are not adjusted properly. A very common mistake when rebuilding these carbs. I would buy the SR kit and one of Cliff's books. Take your time and join his forum over there as there is very specific quadrajet info to be gained. Also double check your ignition system as a weak one will make the truck run poorly as well. I do however your issues stem from the carb and at least fixing that you know you are all good there.
