I dont see why not to put a diesel in the K20. BUT just make sure you feel comfortable working on the 7.3. If you are comfortable with that and just want a bit more power with better mileage than do the swap.

Lots of variables. If its not broke dont fix it. BUT again lots of variables. I only want a diesel in my truck so its a no brainer for me.
