Choice for wheel size

Okay, so i want to go with slightly larger wheels on Ethel, my 78 C-10... I'm not looking to go to extremes, I just want a bit of a bigger footprint than the stock 15x6 wheels give. I'm thinking 15x7 or 15x8, stock steel wheels, with baby moons, but can't really decide which. I should mention suspension is factory height, and although there are no immediate plans for a drop, I may do a mild 2/3" or 3/4" drop at some future time.

What are some of your experiences... combinations that have worked well, or not worked well? My 2 biggest concerns are tire rub or too much space from top of tire to wheel opening. I want something that will fill up the opening nicely, look good, and give me a bit more handling/traction. ...ideas?
