A working thermostat has nothing to do with overheating. Water boils at 212 and decent coolant with a pressurized cap raises the boiling point a fair amount. The thermostat governs how quickly the oil warms and how much and how soon the heater works.

The 195 thermostat was used primarily for pollution control reasons. 180 is more than adequate. Main thing is to get the oil warm enough to rid the moisture out of the crankcase.
