Swithed to a hotter t-stat, now..
the truck is running like dog poop. Idles rough and the the coolant temps are all over the place. How would switching out a 180 stat for a 195 stat cause all this?
 I'm guessing the computer is trying to adapt to the new stat??

That is weird, the '87 takes a 195 stat.

doesn't sound like a T/stat to me. It sounds like you have water in that high priced gas that you have. I used to switch to a 195 T/stat for winters and then I got rid of the older truck. I live North of you about 300 miles and I run 180 degree T/stats all of the time. If you don't have a heating problem (due to a really big radiator) then you should not have to swap out the T/stat. If your heater is plugged, then changing will help some. As for your running rough, check for a good spark and then run some gas line treatment in the tank. If it has a EFI setup then put in some injector cleaner. ( The coolant temps are all over the place) Did you use a "Super Stat". If not then what you are experiencing is the T/stat full closed and then it "POPS" off of it's seat and then it is full open. (Run hot then run cooler) A "Super Stat is made to modulate better and then the temp is more controlled. Check with any Auto parts outlet They carry them under their name usually. We have NAPA, Carquest, and O Reilly's around here.

The computer controls fuel mixtures by reading engine temprature. The factory is a 195. Now, if a hypertech chip is installed in the ECM it requires a 180.
