Cold start idle

After starting the truck in the morning, if I touch the accelerator the idle will drop to normal (warm) idle no matter how cold it is out. It has been doing this for a few months......before, it would slowly come down as the truck began to warm up. Now it will come down to normal idle (700-800 rpm's) before it warms up and will darn near stall unless I baby the gas pedal. What is the most likely reason? Choke thermostat (coil) bad?

I would check the bimetallic spring to make sure the choke closes all the way when th engine is cold.

I would suspect the choke pull is pulling the choke open too far,
although I can't imagine why the adjustment would change. The choke pull is easy to check. With engine running when cold, look at the choke plate to see how far it is pulled open by the choke pull. If the choke plate is open by more than 1/2", then the choke pull needs adjusting.
