Having to flick multiple switches to start is very cool, 'race car'. I'd preserve all the switches, but make it so when the key was off everything was off. So you could leave the individual switches on and turn the truck on or off with the key.

And by all means add the inertial switch as well. Or, perhaps better, a timed relay to provide fuel pump power for starting with a oil pressure driven switch that takes over once the motor starts
